The "Barbaresco Riserva" from Roberto Sarotto is evidence of an elaborate and loving manufacturing process. The grapes are carefully harvested by hand at the end of September to the beginning of October. They then undergo cold maceration for 2-3 days to optimally bring out the fruity aromas. The subsequent 10-day fermentation in stainless steel tanks lays the foundation for the further maturation process. The wine spends 14 to 15 months in large American oak barrels before being allowed to age in the bottle for a further 8 months.

The result of this careful process is a wine full of complexity. The Barbaresco already impresses on the nose with intense nuances of roses and violets. Visually it impresses with its deep ruby ​​red color. The taste is refined and soft, with ripe plums, licorice, spices and chocolate dominating the aroma profile. Roberto Sarotto
