Roberto Sarotto's "Barbera d'Asti Superiore" is a testament to craftsmanship and a deep understanding of the art of wine. The production of this exquisite wine begins in mid-September, when the grapes are carefully harvested by hand. These are then destemmed and pressed and undergo a temperature-controlled fermentation that lasts ten days.

After alcoholic fermentation is complete, the wine is transferred to stainless steel tanks. In the next step, the wine spends eight months in barrique barrels and large American oak barrels. This is where malolactic fermentation takes place, a process that gives the wine its soft, round character. The wine then ages in temperature-controlled stainless steel tanks before it is finally bottled.
