Roberto Sarotto's Dolcetto d'Alba is an excellent example of the authenticity and living tradition of the wines of the Langhe hills. Dolcetto, often referred to as the locals' "everyday wine", impresses with its fruity notes combined with a dry finish. Although it has a soft character, it does not lack a distinct personality that comes directly from the grape from which it is made. You will find a gentle balance in it, complemented by a light, complex spice that tickles the palate.
As for the production of this wine, it reflects the care and dedication with which wine is produced in this region. The Dolcetto grapes are carefully harvested by hand in the second half of September. In order to maximally concentrate the aromas, the grapes are first cold macerated for a week. This is followed by 10 days of fermentation in stainless steel tanks. To give the wine depth and complexity, it is then macerated on the berry skins for another six days. After this intensive phase, the wine is given a well-deserved rest period of 8 to 10 months in stainless steel tanks before it is finally bottled.
Its versatility makes the Dolcetto d'Alba an ideal companion for a variety of dishes. It goes wonderfully with starters such as salami and raw ham, but also with soups, pasta, white red meat and even fatty fish such as eel and salmon. A special feature of this wine that is highly valued by locals is its ability to be enjoyed slightly chilled - perfect for the warmer summer months and cold appetizers.
