The harvest begins at the end of September. The grapes are placed one layer high on the crates to keep them in perfect condition. The grapes are macerated directly in the press for about 10 hours at low temperatures to extract the delicate pink from the berry skins. The grapes are pressed gently and at low pressure. The subsequent fermentation takes 20 days and takes place in inert vessels. The wine ages on its fine lees for four months before being bottled.
The wine presents itself in a light salmon pink color. It is fragrant, with a harmonious and delicate bouquet that combines floral notes reminiscent of roses with hints of pomegranate and small red fruits. On the palate it is balanced with a pleasantly spicy note.
This wine should be enjoyed with food. He knows how to convey emotions at the table and enrich the enjoyment of the best courses of Mediterranean cuisine.
